Fried mozzarella

Two mozzarellas (around 500 grams) - 2 eggs - flour ( much enough to bread) - scratched bread - oil (to fry) - salt and pepper - anchovy - 50 grams. of butter.

For this recipe we preferred mozzarellas with no much water (we recommend you to hold it in the refrigerator for a couple of days). Prepare mozzarella cutting it in slices (about 1/2 centimeters).
Prepares in a dish the eggs beaten with salt and pepper.
The essential passages are these:
- Pass it in the flour (let it rest 3 minutes in the mixture);
- Pass it in the flour;
- Pass it in the egg and subsequently in the scratched bread.

Fry in warm oil (vivacious fire).
Melt in a small saucepan the butter and the pasta of anchovies; pour it on the mozzarella.
